Cheese Cake Reciepe

Here is the recipe I make...they always turn out great. I do bake them directly in the water bath - wrap the pan in the alu foil (from the bottom up), put it in the bigger pan and pour boiling water into the bigger pan.

The other important thing - make sure all your ingredients are room temperature.

2 x cream cheese (8 oz pack)
1 pint sour cream
3 eggs
1 cup sugar
graham crust (I make mine with 2 cups crumbs, 1/4 - 1/2 cup butter and 1/2 tsp cinnamon - melt butter and pour over crumbs and cinnamon. Push into the pan bottom and sides (about 1"). Leave in the fridge for about 5 min while making the filling).

Mix cream cheese until smooth, add eggs, one at the time until incorporated (do not overmix) add sugar little by little and then sour cream just until incorporated.

Bake at 325 for 45 minutes. It will look undone, but it will set as it stands. Leave it in the bigger pan (in the water) for 30 min after taking out of the oven, and then straight into the fridge.

Then you can add some fruit filling on top. So Yummy. Let me know if you like this one.

Sad Sad Sad

Well today is one of those days that you hate to hear the phone ring. My mom called today to let me know that my cousin terri has breast cancer. Wow those words just scare me. Terri and i have always been close. She is about 10 years older than me and when she got married years ago i was the flower girl in her wedding. How sad to think that she has to have surgery to have her breat removed. I am so sadden by this information. She will be having a masectomy on the 4th of nov. I have decided to take the day off and go to orange county for the surgery. It will be a hard day. Of course my family is great at rallying together for something like this. I would imagine most of my cousin will be there for her. I feel a loss as what to say to her because of course i don't know how she feels but being there will let her know that i am thinking of her and supporting her.

So much fun

Wow what a day. We had a blast. Our day started at 8am and all of us left for the scrapbook convention at 9:00. We got there and made our rounds around the fair and we just spent money and had a blast. It was fantastic. Then after that we got home and spent the whole day scrapping. I had so much fun. I will post some pictures of cards that i made tomorrow in the morning. FUN FUN FUN

Crazy Week

It has been one of those crazy weeks. I am working all week and then of course the fantastic scrapbook expo is Saturday. WhoooHooo. I can't wait. Then after the expo i am gonna have a little scrapbook crop here at the house. I am so excited. I love scrapbooking. Sound like a great day to me. LOL

Scrapping With Friends

OMG i had the best time. It was so funny. Sitting with my girlfriend and her family. We always have a good time. But i thought i was gonna pee my pants about 100 times. It was fantastic. I cant wait to do it again. We laughed so hard that i got nothing done. Not one page or one card. First time i go to a crop and get nothing done. It was so worth it just for the relaxation and the laughter.

Cake

Well the last weekend i spent it making cake. I wish cake was not so hard to work with. When i made the nascar car it came out cute but a little more cartoonie than i would have liked. Everyone thinks its just cake. But cake is soft moist and is not that easy to work with. If it were that easy than everyone would make cakes and no one would pay the kinda of money they do for a cake. But it seems that when people ask you to make a cake for them and you tell them what it will cost they say what the heck i can go to costco and get a cake for 14.99. No one can make that kinda of cake for that price. You cant even buy the supplies for that. Costco gets everything real cheap. Then you get a sheet cake. Not a cake that is carved or shaped or even stacked. But then i see people go into a cake shop and have to no problem paying 300 dollars for a cake for there childs first birthday. I mean luckly i dont have experiance with this because i dont make cakes for sale but this is just an observation of what people do. Now that i am in the cake shop i see all kinds of things that just amaze me. Like people are getting married on saturday and they come in on friday and want a wedding cake. They just think it you take a cake out of the freezer and wham in five minutes you have a cake.

Eriks Birthday

He was so excited. I love it. Its like he is 3.

Seans Cake

Holly asked me to make a cake for sean for his party with his friends. I hope he likes it. I thought it came out cute.

Nascar Cake

Well here is my try at a nascar cake 3-D. I am not sure if i really like it. It seems a little to cartoonie for me. I was hoping for more detail but my hands would not let me keep going. I think if i had to do it again i would have ediable images put on the cake so that it would look better. Oh well how do you know until you try. Good thing it was just for erik and not a cake i was selling.

Fall

I love fall. I cant wait until uncle sean retires someday so that he can take me to see the trees in full color. I know i will not be able to get him to take me until then so i have to look at beautiful pictures to see what i am missing.

Wisdom Teeth

Well i have to say my tawny is a trooper. She had her wisdom teeth pulled on friday and has been doing ok. Saturday she didn't complain just laid around ate soup and watched movies. Sunday well i think it finally hit her a little harder for some reason. He tummy was upset and she was having trouble keeping food down. Her mouth is hurts much more today than it did yesturday. I think i might have to keep her home tomorrow. What a crazy weekend. Its seems them next three weekends will be a little hectic for me. Something going on every weekend. This weekend i will be making the nascar car. I started by making all the little stickers today out of fondant. And when they dried then i painted them. Now that this part is done tomorrow i will make the tires. Friday i will bake and decorate. I will be gone all day on saturday so i will not be able to work on the cake that day. And then the Eriks birthday is sunday. Well that is it for my weekend. I will post pictures on friday.
